<P>Conversion of low-cost sugar beet leaves into valuable yeast biomass was described. Enzymatic hydrolysis followed by thermo-chemical processing were used to prepare leaf hydrolyzates. Results demonstrate the possibility of economical utilization of hydrolyzed sugar beet leaves for the production of valuable yeast protein.</P>
