This work is focused on the evaluation of lipase production by Geotrichum candidum in shaken-flasks and bench-scale bioreactor using different impellers. The effects of temperature, initial pH, peptone, NaNO<SUB>3</SUB>, MgSO<SUB>4</SUB> and soy oil concentrations in the enzyme production were evaluated using the experimental design methodology. The optimum conditions in shaken flasks were 3.0% of peptone and 0.5% of soy oil, with initial pH of 7.0, 30<SUP>o</SUP>C and 250rpm reaching approximately 16UmL<SUP>-1</SUP>. The lipase production was also studied in a bench-scale stirred bioreactor, where the Rushton turbine and pitched blade up were appropriated impellers for this process.
